Via Culinaria - seven pathways through Salzburg's Cuisine

Time for the 2nd Edition of Via Culinaria   
Seven culinary pathways and 200 culinary addresses in SalzburgerLand

 Since 2009, gourmets and aficionados of good taste have been out and about on the Via Culinaria in SalzburgerLand. Seven culinary theme routes lead out through all tourism regions, and to select culinary addresses. This year’s brochure now appears in its 2nd edition: Supplemented by new culinary highlights, bookable packages and great tips for day trips.

 The popular Via Culinaria places the variety of Salzburg regional products squarely at the forefront, uniquely intertwining a SalzburgerLand holiday with good taste and the joys of food. Due to the uniquely broad and diverse array of internationally acclaimed restaurants, alpine huts, organic farms, food producers and overall enjoyment opportunities, it is possible to embark on culinary journeys here year-round. With two years now “in the books”, the comprehensive brochure now appears in its second edition.

New from the Via Culinaria
In its second edition, the Via Culinaria features over 200 culinary highlights, all of which have been tested and carefully selected by a Salzburg gourmet journalist. The number of our province’s restaurants awarded the prestigious “toques” of Gault Millau has increased in recent years, now having amassed a total of 105 spread amongst numerous dining establishments. The culinary pathway for gourmets alone has added four new addresses. Also new are the bookable Via Culinaria packages: available for every Salzburg region, they also include touring suggestions allowing you to explore the Via Culinaria in one or three days.

The Seven Culinary Pathways of the Via Culinaria  

  • The Culinary Pathway for Gourmets
    The Culinary Pathway for Gourmets assembles the best kitchens in the entire province, from the traditional country inn to the suave city restaurant, from the modern designer eatery to the romantic lakeshore terrace. An exclusive selection of Salzburg’s top restaurants, including two four-toque establishments. With Restaurant Esszimmer and Restaurant Bruno Nuovo in Salzburg City, Restaurant Weyringer in Neumarkt and
    Restaurant-Hotel Sonnhof in St. Veit, four new addresses now add to the culinary variety.
     
  • The Culinary Pathway for Meat-Eaters  
    SalzburgerLand’s meat specialties are world-famous. Take, for example, Pinzgau beef, the high-quality foundation of a classic Tafelspitz or a Schulterscherzel. At this pathway’s 14 addresses, imaginative master butchers, award-winning chefs and regional cooks turn Tennengau mountain lamb, Pongau wild game, hill-country pork and goat-kid into dishes of the very best. Especially flavourful are the ever-popular bacon and sausage specialties such as Pinzgau bacon, cured in apple pomace, and Almwuschz’n with wild honey.
     
  • The Culinary Pathway for Fish Fans
    The Culinary Pathway for Fish Fans has also added one new highlight: Gasthof Bräurup in Mittersill rounds things up to a full dozen. SalzburgerLand boasts a considerable number of chefs who have perfectly mastered the careful preparation of regional fish specialties. Whether Salkammergut whitefish or Bluntau char, as a soup or jellied, or perhaps smoked trout savored on the shores of lake Fuschlsee: Enjoyment of the fish is complemented by a good glass of wine, along with a perfect backdrop of mountains and lakes.
     
  • The Culinary Pathway for Beer and Schnapps Aficionados
    Beer has been brewed in Salzburg City for over 500 years.  Those who wish to devote themselves to enjoyment of exceptional beers, will encounter a wide variety of breweries, beers and exceptional specialties, such as the world’s only organic beer, brewed according to stringent Demeter guidelines. With the aid of a new guide, beer lovers in and around Salzburg can set out on a journey of discovery on the trail of Salzburg’s beer culture. Whilst inns and restaurants allow diners to sample special dishes such as Maltman’s Hash, Brewmaster’s Griddle, beer dumplings and hops cake, the very best distillers of the land conjure up the likes of bock-beer brandy, and rowanberry or pine schnapps.
     
  • The Culinary Pathway for Sweet Tooths
    At these 15 carefully selected culinary addresses along the Sweet-Tooths Tour, visitors are able to indulge their yearning for an array of sweets: Fans of pastries, cakes and pies can wend their way through the SalzburgerLand, from patisserie to patisserie, from café to café. These include numerous tradition-rich coffee houses, such as Café Tomaselli and Café Fürst in Salzburg City, along with exceptional ice-cream cafes such as those in St. Gilgen, Mattsee and in Golling. And let us not forget the praline paradise that is Berger Feinste Confiserie in Lofer.
     
  • The Culinary Pathway for Cheese Freaks
    Here in SalzburgerLand, cheese is held in the highest regard:  from Pinzgau beer cheese to Tennengau Almkäse, to the goat-cheese specialties of the Lungau. 13 addresses – farmhouse cheeseries, delicatessens and restaurants – all dedicated to our domestic specialty cheeses, with a selection that grows from one year to the next. This selection has now been joined by Summastoa semi-soft cheese and six-month-ripened Hochwieser hill cheese. At the hill cheeseries of the Tennengau, a cheese sommelier will even help visitors discover the hidden secrets behind exceptional cheeses.
     
  • The Culinary Pathway for Hut Lovers
    The culinary magic of Salzburg’s alpine huts is the result of the wonderful titbits featured in wild-game and beef specialties, crispy-fresh salads, homemade soups, along with exquisite cakes and pies. It is not rare for the ingredients and items to come from their very own farm, including homemade cheeses and breads, and pastries right out of the oven. However the mood takes them, hut gourmets are able to indulge their passion at 18 culinary stops along the Hut-Lovers Tour, at huts rich in tradition or in modern mountain lounges where enjoyment is what it is all about.

 

Culinary Journey to Salzburg’s Markets
Salzburg culinary journalist and author, Doris Maier, strolls and samples every week at the  Salzburg Schrannenmarkt on Mirabell square and at the Grünmarkt on university square. If she asked, she is more than happy to accompany guests who share her interests – recounting the history of these markets, sampling products at one stand after another, and charming the occasional culinary secret out of the merchants.
