Chain supermarkets drove growth within the UK self-service cafeteria market through to 2011 and dominated sales, accounting for 97% of outlet volume, transaction volume and value sales.
This reflects the importance and dynamism of the leading grocery retailers in self-service cafeterias, with Tesco, Morrisons, Sanisbury's, Asda and Marks & Spencer together accounting for 73% of outlet volume in 2011 and continuing to gain share.
A cafeteria is a type of food service location in which there is little or no waiting staff table service, whether a restaurant or within an institution such as a large office building, school or supermarket.
The UK self-service cafeteria market was dominated by grocery retailers in 2011, with the leading player in the grocery retailers market also being the leading player in the UK self-service cafeteria market thanks to its large outlet volume.
Tesco accounted for a strong 23% value share in 2011 and 25% chained value share, benefiting from its popularity as a shopping destination and its large outlet volume of 685 self-service cafeterias.
Sainsbury's meanwhile ranked second with 15% share, while Morrisons and Asda ranked third and fourth with 13% and 12% value share respectively. These four players thus accounted for a combined 63% value share in 2011.
Asda and Sainsbury's saw the strongest growth in value share in 2011 over the previous year, gaining around half a percentage point each. J Sainsbury benefited from a strong ethical positioning and from working to remove all artificial colours, flavours, flavour enhancers, sweeteners and benzoate preservatives from its products.
Asda meanwhile benefited from its low prices. The chain also introduced free food for children in November 2011. Those with young children spending £1 or more in its cafés benefit from free baby food, while kids' meals are available free to those buying any adult meal.
