Over the last few years, Katie May has grown rather fond of the elder, which favours nitrogen rich soils. There are many interesting ancient theories about the elder, including, its use as an insect repellent and a gardeners’ friend. We now understand that it has an extremely high Vitamin C content, which gives a useful boost to our protein.
