Rice gelée Shown at SIAL Paris 2018 and Paris Restaurant

Paris, France (November 2, 2018) – Leading global manufacturer of engines and industrial equipment, Yanmar, has ventured into the food industry, with subsidiary, Yanmar Agri Innovation revealing its gluten-free Rice gelée ingredient. Yanmar Agri Innovation showed Rice gelée at the world’s largest food innovation exhibition, SIAL Paris 2018, over October 21 to 25, and also held a tasting event at a local restaurant for local and international press. Rice gelée, a natural gluten-free food product made from just rice and water, was met with great interest at its first outing outside of Japan.

In the runup to SIAL, Yanmar enlisted Michelin-starred Restaurant PAGES to hold a media event for local and international press on October 18th featuring a selection of dishes using Rice gelée. With Restaurant PAGES sharing Yanmar’s aim to revitalize agriculture and increase rice consumption, Yanmar approached PAGES owner-chef Ryuji Tejima to devise a menu that could showcase Rice gelée’s unique potential. In the demonstration that followed, Tejima explained Rice gelée’s unique properties and prepared an original Rice gelée-based menu of: Gluten-free Buckwheat Galette, Cream Curry Soup with Springy Gluten-free Bread, Brioche Muffin Burger, and Sukiyaki Beef with Chinese Bread, for the assembled press to sample.

Yanmar looks to continue its efforts to reinvigorate agriculture, creating new value-added propositions for rice itself, to increasing consumption of the grain. ※Rice gelée is a gel-like food ingredient made from just rice and water. With superb moisture retention and emulsification properties and its utility as a thickening agent, it is a useful gluten-free ingredient to improve texture in breads and cakes, act as a binding ingredient in hamburger or noodles and can meet a diverse range of needs in a wide variety of foods.
