Are you wondering what to create for Give a Hand and Bake in support of stroke this month?

Get inspired by our great supporter Marie from Bridgend’s Slimtone healthy living classes with 12 slices of her not too naughty lemon drizzle cake.

Ingredients

8oz/225g half fat butter

4oz/225g half spoon sugar

4 eggs, beaten

Zest of 2 lemons

Juice of 1 lemon

10ozs/300g s.r. flour

TOPPING

Juice of 2 lemons 1 tb icing sugar, 1 tb Half Spoon sugar

Get baking!

Preheat the oven to 150C, 300F, Gas Mark 2. Cream together the margarine and Half spoon sugar in a large bowl. Gradually mix in the beaten eggs. Stir in the flour, baking powder and lemon juice and zest.

Pour the mixture into a loaf tin and level the top with a knife. Bake in the centre of the oven for 1hr 40 minutes until risen and golden brown.

To make the topping, mix together the lemon juice and half spoon sugar and drizzle over the top of the cake while the cake is hot. Allow to cool before slicing.
