Spice Brasserie Unveils a Brand New Dining Concept

Singapore, January 2020 – Long known for its sumptuous Asian-style buffet spreads, Spice Brasserie has recently unveiled on 12 December 2019, a refreshed and gorgeous new look complete with an exciting dining concept that embraces the best of Asian street food with innovative surprises.

Promising to be a worthy destination for all occasions, Spice Brasserie is perfect for convivial family gatherings, cosy meals for buffet-loving couples, and even corporate dining among business associates who will enjoy the extensive buffet line that comes with four outstanding live stations – Charcoal Grill, Tandoor, Asian Salad Bar and Teppanyaki Ice Cream.

Elaborates Robert Chan, Executive Chef of PARKROYAL on Kitchener Road, “We are very focused on quality ingredients, authentic flavours and creating dishes from scratch. Our team is a wonderful mélange of individuals from countries; namely Malaysia, South Korea, India, Taiwan, and of course, Singapore, who bring together their love for street food to the next level by featuring lesser-known varieties in unexpected ways. This is a buffet unlike any other.”

Buffet Highlights

Charcoal Grill

Street food in Asia and charcoal fire go hand in hand, whereby ingredients are grilled to achieve a delicious full flavour. The heart of the restaurant is its custom-made charcoal grill used to cook meats together with claypot dishes. Interestingly, the kitchen team also adopts the Robatayaki style grilling for selected items. Robatayaki (炉端焼き, literally "fireside-cooking") is a specialised Japanese grilling method often executed at varying speeds over hot charcoal.

Star dishes include Spice Brasserie’s rendition of Black Char Siew, slow cooked on the grill to achieve a sticky caramelised exterior, while remaining tender and juicy within, thanks to a secret recipe sauce concocted by the team.

Another must-try is the Broken Rice Claypot Porridge, a dish that is meticulously cooked in batches on the charcoal fire to produce a light umami broth that is then topped with a generous serving of white clams, barramundi and *oysters.

A fun item to pick up is the homemade BBQ Carrot Cake that is served ‘potong’ style ice cream on a stick, for a touch of childhood nostalgia.

Surf and turf selections here compromises of Salt Water Grilled Barramundi, Barbecued Marinated Leg of Lamb and Crispy Roast Pork Belly Roll. In addition, the Spicy Cinnamon Honey Pineapple is grilled to perfection and a great accompaniment to one’s meal.

Tandoor

This station is a befitting tribute to the hotel’s location in the heart of Little India and offers North and South Indian fare. Diners must sample the Squid Ink Naan, a striking inky coloured flatbread that pairs perfectly with the tandoori items and honest-to-goodness sides, the likes of Butter Chicken and Gobi Manchurian.

Asian Salad Bar

Appeasing ‘Do-It-Yourself’ salad lovers, the restaurant offers unique ingredients that are tasty yet wholesome. Diners can look forward to superfoods like quinoa and kale as well as street food finds compromising of Kimchi, Japchae Noodles and Braised Tau Kwa to form the salad base, condiments such as Shrimp Floss and Crispy Soya Beans, along with delicious dressings the likes of Chinese Peanut Butter, Soy Oriental, and Mala. The fun element lies in watching the chef chop up the ingredients and toss them before the guests’ eyes.

Teppanyaki Ice Cream

Rarely seen at buffets, this live station showcases daily specials such as Piña Colada Ice Cream and Matcha with Azuki Beans and Mochi on top of customisable options. Guests may choose from an array of confectionery essentials like chocolate sprinkles, marshmallows and cereal, that are then mixed together a la ‘teppanyaki’ style.

Other delights

Live stations aside, the spread also features seafood on ice, selection of sashimi, popular *Stir Fried Slipper Lobster in Black Pepper Sauce, *Chilli Crab with Mantou, freshly made crackers and dips, along with lesser-seen dishes featuring Gimbap, Nanjing Salt Water Duck and Saigon Pancake

Ending things on a sweet note, the commendable local dessert selection features homemade Durian Pengat with Sticky Rice, DIY Mua Chee with Peanut and Black Sesame, Snow Pear and White Fungus with Red Dates and Goji Berries, Rum Ball, assorted Kuehs and Chempedak Cake. Made from scratch daily, these old school favourites are the perfect finish to a fulfilling meal. Diners may also have a go at being a bartender with the restaurant’s DIY Mocktail section.

Refreshed Modern Interior

Boasting an entire new look complemented by sleek, light wood décor, the 300-seater restaurant spans 850 square feet of space that is conducive for celebrating special occasions, making it a go-to dining destination.
