PRESS RELEASE: Fruit gummies to display Lycored’s true colours

Lycored’s carotenoid-derived colours are perfect for fruit gummies, the company is to demonstrate.

The global carotenoid experts will be handing out gummies in six different fruit flavours at Food Ingredients Europe. Their vibrant colours are achieved using Tomat-O-RedTM  (Lycored’s range of reds to pink from tomato-derived Lycopene) and Lyc-O-Beta TM  (yellows and oranges from BetaCarotene).

The gummies, provided by US candy manufacturers Albanese, are fortified with Vitamin C.This disrupts the stability of some colourants, but not Lycopene or BetaCarotene.In fact, Vitamin C amplifies the vibrancy of Tomat-O-Red TMand enhances the stability of Lyc-O-Beta TM.

Tomat-O-Red and Lyc-O-Beta are currently used by several confectionery manufacturers and Lycored is undertaking formal trials of their performance in gummies. Vitamin C-enriched jelly bears will be exposed to a range of extreme heat and light conditions and any colour changes will be monitored.

This is basically a sneak preview ahead of formal stability trials.If our visitors can resist the temptation to eat them on the spot, they’re welcome to hang on to them to see how well our colours perform over time.”

Lycored’s range of tomato-derived flavour and texture solutions will also be on show at Food Ingredients Europe. The company has developed several new recipes, including a home-style pizza created with an artisanal bakery in Italy.Its base is low in salt but still delivers a delicious flavour thanks to SANTE – Lycored’s tomato-based flavour enhancer. It is topped with tomato sauce designed by an Italian application specialist and enhanced with both SANTE and Lycored’s CTC (Clear Tomato Concentrate).

Lycored will also highlight the versatility of its ingredients in the condiment category. It has created a special BBQ sauce highlighting improved taste from SANTE and CTC, and improved texture from LycoFibers.It will also be showcasing a vegan mayonnaise concept that shows how SANTE can help manufacturers target vegetarian or vegan consumers with improved tasting products.
