Competition is flamin' hot at Dalriada with Kansas City BBQ Society

Ireland’s first International Kansas City BBQ Society Competition is being held at Dalriada Festival in Glenarm Estate on 13 and 14 July 2019.

Teams will compete in several categories. Saturday will see the teams cooking steak, lamb and salmon.

Sunday, the main competition day, will focus on cooking chicken, pork ribs, pork shoulder and brisket.

The ingredients will be from Northern Ireland and each team will be presented with an identical basket of ingredients to work with. Pre-prepared sauces and ready-made marinades are not allowed, but teams are allowed to bring their own herbs and spices. 

This event has been kindly sponsored by Mid & East Antrim Borough Council, Hannan Meats and Meadow Farm Quality Foods, Oakridge BBQ, Primo Grills, Flameboss, Lodge Cast Iron, Prosmoke BBQ and Heat Beads.

Entries for this are now open and the cost per team is £100+VAT. This will include – 3m x3m space, electricity and water supply.

Food NI’s Christine Cousins explains: “Celtic Smoke is going to be a tremendously colourful event for everyone at what is probably one of best possible locations here particularly during the successful Dalriada Festival. Our hope is that it will become a regular feature of the vibrant food and drink scene here.

“We have been delighted by the support the initiative has already received from the Mid and East Antrim Council, which has a longstanding commitment to the successful development of companies in its Food Network, as well as Meat Merchant and many BBQ equipment suppliers.

“The support we have received and continue to receive from Adrian Morrow and Nigel Campbell at Glenarm Estate for the event is immensely important and will help ensure the event is an outstanding success.

Become a Kansas City BBQ Judge

The KCBS tem will demonstrate the cooking process for all the meats to be cooked in the Celtic Smoke BBQ competition and describe in depth the necessary flavour profiles and the textures they are looking for at competition level.

Once the course is completed, you will become a registered KCBS judge and have the opportunity to judge in any KCBS competition around the world, for a full year. The course will run from 12 – 13 July at Glenarm Estate.

Backyard Cookery Class

Do you love BBQ food and are keen to learn some of the trade secrets? We are hosting BBQ cookery classes on 11 July with Kansas City BBQ Society. This is an amazing opportunity to learn from the kings and queens of BBQ.

They will explain everything from what charcoal to use for different cooking techniques, temperate control, holding areas on the grill and how to achieve the perfect steak

Flavour profiles will be explained and there will of course be the opportunity to sample all of these yourself. Tickets cost £48pp (including a BBQ lunch).
