Raffles Appoints Steve Van Remoortel, Executive Chef at Raffles Hotel Le Royal
(October 2011) : Raffles Hotels & Resorts has announced the appointment of Steve Van Remoortel, Executive Chef at Raffles Hotel Le Royal, Phnom Penh. An accomplished chef with over 20 years of international culinary experience, including a Michelin star at Torsk in Belgium, Steve joins the Raffles team to inject and inspire creative flair in the kitchens of Raffles Hotel Le Royal.
Phnom Penh is a melting pot of Cambodian and International cuisine and the arrival of Steve signals an exciting time for Raffles Hotel Le Royal's two restaurants; Restaurant Le Royal which serves a wide selection of classic French and Royal Cambodian cuisine and Cafe Monivong with its a la carte menus of Western and Pan-Asian dishes. Restaurant Le Royal is the meeting place for the Who's Who of Phnom Penh and the celebrated Executive Chef's degustation menu allows guests to try a myriad of dishes in one single meal.
Commenting on the appointment, Richard Schestak, General Manager for Raffles Hotel Le Royal says,

Steve began his career in various award-winning restaurants in his native Belgium, and since then has held a series of progressive positions including Owner/Executive Chef of Taverne Heuvelzicht, Belgium and Senior Sous Chef at Casablanca Restaurant, Miami, USA. In 1996, he joined Sandcastles Resort in Jamaica, West Indies in the position of Executive Chef and F&B Manager.
- Between 1999 and 2003, Steve returned to Belgium and held the position of Chef de Cuisine at Restaurant Torsk, where he achieved a Michelin Star and later in 2003 moved to London as Opening Executive Chef for a new hotel at Canary Wharf. In 2005, Steve relocated to Southeast Asia where he held several Executive Chef positions including the Racha Phuket, Small Luxury Hotel of the World, followed by The Dusit Thani Bangkok and Genting Highlands Hotel & Casino, Malaysia. In 2008, he joined the Pan Pacific Bangkok as Executive Chef where he was responsible for the successful launch of Panorama Restaurant. During that time, Chef Steve achieved the Thailand's Best Restaurant Award 2009 and was renowned as acclaimed chef for one of Bangkok's finest brunch venues.
- Steve joins from his most recent position as Executive Chef, Naiade Resort Diva, Maldives, where he has been since 2010 prior to joining Raffles Hotel Le Royal in October 2011.

RAFFLES IN CAMBODIA: Opened in 1929 and 1932 respectively, Raffles Hotel Le Royal, Phnom Penh and Raffles Grand Hotel d'Angkor in Siem Reap are the only luxury hotels in Cambodia that pre-date the civil war and the Khmer Rouge era. They were brought into the Raffles portfolio in 1997 after thorough and sensitive modernisation. The hotels were the work of a French Colonial architect based in Hanoi, responsible for the design of many buildings constructed in French Indochina in the early 20th century. So it is appropriate that French interior designers based in Ho Chi Min City should be playing a starring role in the next chapter of the hotels' lives. The design company was given the brief to breathe new vitality, elegance and comfort into the interiors by subtly updating the hotels' much-loved French Colonial, Art Deco and Khmer style and ambiance.
