Nordic food and design meet at Formex

Nordic food and design have been a big hit abroad in recent years. At Formex, on January 14-17, 2015, visitors will be presented with a superb all-around experience at Nordic Eat, a temporary pop-up restaurant where food and design are intertwined through Nordic Neat, the spring trend theme.

Formex's pop-up restaurant is a combination of an exhibition and restaurant built specially for Formex's visitors and will only exist during the four days of the fair. Jan Rundgren is the man responsible for the design and concept this time around.

“It was a given for us to put the Nordic theme front and center when we created the concept for the pop-up restaurant. We currently have one of the best restaurants in the world here in the Nordic region, NOMA in Copenhagen. We also have one of the best chefs in the world – Swede Tommy Myllymäki. The Scandinavian trend is one of the strongest in both design and food," says Jan Rundgren.

“These days, it has become all the more important to think in purely conceptual terms when opening a restaurant. There are a lot of things that have to be just right. The right tableware to fit the food, the right music, a good reception and making sure that the food and interior design match each other. We eat out more and more these days, and guests just keep demanding and learning more when it comes to food. This seems like a trend that will go on and on," says Jan Rundgren.

Nordic Neat, the spring trend theme, permeates your visit to Nordic Eat – from the interior design and the composition of the menu to how the food is prepared and how it is presented on the plate. We have worked closely with Chef Thomas Andreasson from Mässrestauranger.

“In my first meeting with Jan Rundgren, he told me about settings and concepts and he had certain specific preferences. Since the design is Scandinavia-inspired, it was only natural to think in terms of Scandinavian food, especially Scandinavian ingredients. It is also important to have an overall perspective and think about how the restaurant will look. Since the setting is modern, it is important to keep in mind that the setup should be contemporary. An open kitchen, where guests can see the chefs preparing the food, conveys a sense of contemporariness. It's an active and open process," says Thomas Andreasson.

Mässrestauranger is the same catering company responsible for the Nobel Banquet at Stockholm City Hall.

Formex will take place on January 14-17, 2015, at Stockholmsmässan.
