Mathias Dahlgren presents Matbordet

In early April, Mathias Dahlgren launches a new experience focused on the creation, together with the guests, of the meal of the future. The starting point is a communal dining table where the chef cooks for ten guests and they together, share an evening in which the food, conversation and exchange of experiences is central.

- Both we and our guests crave new experiences and this is a natural evolution that we are excited to share with them. Seven years ago, Matbaren was tomorrow's restaurant while today it is rather the norm. Now we strive, together with our guests, to once again look into the future, says Mathias Dahlgren.

Matbordet (Swedish for ‘the dining table’), which is a complement to Matsalen (the dining room) and Matbaren (the food bar), originated in the desire to get closer to the guest, develop, learn more and learn from each other. It is a table, built on-site, in a secluded part of Matsalen that seats about 10 guests, a chef and an additional person of expertise such as a producer, ideologue or scientific specialist. No meal will be like another because each day, a unique encounter will be created together with new guests. In close dialogue with the guests and with the actual cooking process in the center, the participants create the meal experience together.

- The basis of all the food we cook is within the context of "The natural cuisine". With Matbordet, in relation to a traditional restaurant, we create the opportunity to bring out the process directly to the guests. It is something that we experience as being in-demand and with Matbordet, we can inspire and share insights, knowledge and experiences with as many people as possible, continues Mathias.

Matbordet is being built in Matsalen as a restaurant within a restaurant. On weekends, guests will break bread with new people and the dining experience will be based on the evening’s three selected produce ingredients. On the other days of the week Matbordet will offer other experiences. Among other things, there will be knowledge-sharing on the menu; where the meal takes inspiration from the scientific. Producers will be invited to share their experiences. It will also offer radical cooking where the chef challenges him or herself to, in one hour, with only one dish and one beverage, create an adequate experience for the guests. Matbordet will also be the natural work place of Mathias and his team to push the creative development for the restaurants forward.

Reservations for Matbordet open on March 31 and initially it will be possible to reserve a maximum of four places at a time. This is to encourage the exchange of experiences and an education-rich conversation between the guests.
