Mathias Dahlgren interprets Swedish christmas food

For the first time ever, Mathias Dahlgren is taking on Christmas food and cooking up his interpretation of yuletide produce and flavors, spiced with a big pinch of innovation. During the month of December, his Christmas dishes will be served at Matbordet, where chefs will cook five courses using Christmas produce with a contemporary twist for a maximum of 10 guests at a time. Booking is now open.

Matbordet, Mathias Dahlgren’s latest and highly popular addition to his Matsalen and Matbaren restaurants, has now been in operation for eight months. Every weekday evening, guests have the opportunity to take one of the 10 seats at Matbordet and be served directly by the chef, while taking part in a discussion about the dishes at hand, based on a specific theme. The idea is to get closer to the guests in order to develop and learn from each other. For the first time ever, Christmas food will now be served at Mathias Dahlgren, with guests being treated to a completely new experience of Christmas produce and flavors through the concept of Matbordet. Rather than classic dishes, guests can expect a new dining experience, with fresh salmon, for example, served raw in an encounter with something smoked, or the traditional rice pudding turned into a light, elegant dessert with the same tastescape, and instead of a lavish buffet the chef will focus on five servings.

With Matbordet we aspire to create a more playful Christmas food experience. My personal favorite on the Christmas smörgåsbord is all the different sorts of marinated herring, which I can guarantee will turn up in several different forms in our Christmas food,” saidMathias Dahlgren.

A natural part of sitting around Matbordet is taking part in discussions about the dishes at hand and in December it will be about the culture and history of the Christmas Smörgåsbord, as well as how Christmas food can be developed going forward. New flavors and interaction with the chefs and the other guests at the table offers an exciting alternative to the traditional Christmas dinner or lunch with friends, family or colleagues.

Bookings are now being taken for Christmas lunch or dinner at the Dining Table and are available for two to ten guests, with seatings from Monday to Saturday during the November 24 – December 20, 2014 period. Christmas fare at the Dining Table is available as both lunch and dinner at a price of SEK 1,500 for the five-course meal.
