Better Water, Better Coffee: Bluewater Showcases Breakthrough Tech in San Diego
SAN DIEGO, Calif. — April 2026 — At World of Coffee San Diego 2026, Swedish company Bluewater is changing how the coffee industry thinks about water, an often overlooked ingredient. From April 10 to 12, more than 15,000 coffee professionals from over 90 countries will gather for the Speciality Coffee Association's North American event, bringing together roasters, café owners, manufacturers, and buyers.
“Central to Bluewater’s presence is its Café Station, an innovation that gives professional baristas direct control over water quality,” said Bluewater USA chief Niklas Ivarsson. He emphasized that the system is based on a simple idea: better water makes better coffee.
Bluewater’s main hub will be at the Sanremo booth (#2235), where a live water system will offer chilled still and sparkling water and support espresso machines. This system will reach across the show floor, supplying water to several partner booths through Bluewater Serve activations.
Bluewater treats water as a priority, not just a background utility. Its technology uses SuperiorOsmosis™ purification to remove impurities with a special filtration process, and LiquidRock® remineralization to add minerals back into the purified water. This creates water designed for coffee extraction. The goal is to improve taste, keep results consistent, and protect equipment from scale.
This approach is part of a bigger change in specialty coffee. Roasters and café operators now look at every detail, including water, that affects flavor. Unlike many traditional water softeners or generic filters that only address hardness or basic impurities, Bluewater’s system allows precise adjustment of both mineral content and purity tailored specifically for coffee extraction. This helps baristas avoid the uncertainty that comes with inconsistent local water and provides a consistent baseline for optimal flavor and equipment protection. By offering advanced purification combined with custom remineralization, Bluewater stands out as a solution designed for the unique demands of specialty coffee.

Outside the Sanremo hub, Bluewater also supports demonstrations at partner booths and runs a pour-over station with Pro Coffee Gear. These activities show, in real time, how water affects espresso balance and the clarity of hand-brewed coffee.
