Swedish Water-Tech Innovator Bluewater Launches Coffee Rock in Europe, Bringing Precision Mineral Engineering to Specialty Coffee
New science-led formula aims to improve coffee extraction, eliminate machine scale and corrosion, and redefine brewing performance for cafés
London, May 15, 2026 – What if the future of better coffee had less to do with beans and machines — and more to do with water chemistry?
Swedish water and beverage technology company Bluewater is betting precisely on that with the European launch of Coffee Rock, a new mineral-engineered water formula designed to optimise coffee extraction, improve flavour consistency and protect professional brewing equipment.
Following a successful global debut at the World of Coffee Bangkok in early May, Coffee Rock officially launches in Europe this Saturday at London’s Bloomtown Coffee Festival, held at the Rose Lipman Building in Hackney. The festival is co-organised by Batch Baby and Coborn, two of East London’s most celebrated specialty coffee destinations. A dedicated Bluewater Café Station has been installed at Batch Baby’s stand to showcase the technology in a live café environment.
Developed over two years under the leadership of Bluewater Chief Scientist Dr. Ahmed Fawzi and commercially led by Product Lead Maximillian Lundin, Coffee Rock applies precision mineral engineering to one of coffee’s most overlooked variables: water.
While water makes up more than 98 percent of brewed coffee, its mineral composition directly affects extraction, flavour and equipment longevity. Coffee Rock addresses this through a radically redesigned mineral profile, featuring a 6:1 magnesium-to-calcium ratio — six times more magnesium than calcium by weight — engineered to enhance sweetness, flavour clarity, complexity and body in specialty coffee.
“Flavour is something baristas should be able to dial in with precision,” said Maximillian Lundin. “Coffee Rock mineralises every cup precisely so each bean can express its full character. Same dose — more flavour.”
Bluewater says Coffee Rock also solves a costly engineering problem for cafés: scale and corrosion inside espresso machines. Traditional water often contains bicarbonates that create limescale under heat and chloride that corrodes metals such as stainless steel and brass.
“Coffee Rock is the only mineral formula engineered to support optimal extraction — not just in the cup, but by keeping the espresso machine performing at the top of its game. Baristas can push extraction while cafés reduce maintenance, downtime and equipment wear,” said Lundin.
Coffee Rock is designed to work with the Bluewater Café Station, powered by Bluewater’s proprietary SuperiorOsmosis™ water purification technology, which removes up to 99.7 percent of contaminants while using less water than conventional reverse osmosis systems.
“Water chemistry remains one of the least understood yet most influential variables in specialty coffee,” said Dr. Ahmed Fawzi. “Coffee Rock combines scientific precision with practical café performance and has the potential to redefine brewing standards.”
Available from mid-May in the UK, Sweden, Asia, North America and the UAE, Coffee Rock will launch at the same price point as Bluewater’s previous Liquid Rock technology.
Interested in trying Coffee Rock? Bluewater will shortly send free sample vials to coffee partners. Coffee roasters, cafés, distributors, brewing professionals, and journalists can request samples by contacting Maximillian Lundin by email at maximillian.lundin@bluewatergroup.com with their name, number of vials needed, and shipping address. Bluewater will arrange delivery while supplies last.
