Christopher visar hur man tillagar en perfekt hel kyckling


Supposedly, every time Julia Child visited the French Laundry, the staff would always send out a roast chicken for her to enjoy. There’s something beautiful about a perfectly roasted chicken, served at the table. Today, I’ll show you the methodology for the perfect roast chicken. It includes steps such as brining, trussing, drying and roasting. It’s key to pay attention to the salt-to-water ratio in the brine, as this will flavor the chicken throughout. Trussing the chicken might be new to you but don’t be intimidated, it’s very easy and will make sure the chicken keeps its shape while cooking, thus helps the juices circulate evenly.

Follow this recipe and I can promise you this will be your template for very roasted chicken of yours in the future!

Perfect Roast Chicken

Serves 4-6

1 whole organic chicken, 1.5kg Clarified butter, Salt

For the salt brine:
4 lemons, halved
5 bay leaves
Small handful fresh parsley
Small handful fresh thyme
70ml runny honey
1 whole head of garlic, halved
1 tbsp each black peppercorns, white peppercorns
4L water
250g kosher salt

Instructions:

1) Combine all of the salt brine ingredients and bring to a boil, turn off heat and let cool slightly. Put in the refrigerator and once completely cool, submerge the chicken in the brine. Let the chicken sit in the brine for 10 hours in the refrigerator.

2) Remove the chicken from the brine and pat dry. Truss the chicken (I’d suggest looking up this method online, as there are plenty of helpful videos of how to truss a chicken). Place the chicken on a wire rack and put in the refrigerator for 2-3 days.

3) Remove from the refrigerator and allow to temper. This will take between 1 to 1 ½ hours.

4) Preheat the oven at 250C. Brush the chicken with clarified butter, sprinkle fine salt all over and place in a cast iron pan. Roast for 20-25 minutes. Lower the temperature to 200C and finish roasting for 35-45 minutes, or until the breast meat registers 67C at the thickest part. If the chicken is coloring too fast, add aluminum foil to cover affected parts.

5) Remove the chicken from the oven and let it rest for 30 minutes before carving.
