Cooking for someone with a food intolerance can be daunting and confusing. If you are catering for a child or a dinner guest with lactose or gluten intolerance it can be especially tricky as there is still very limited awareness about these dietary requirements within mainstream food publications. Michelle Berriedale-Johnson is a food historian by training. She became interested in allergies when her baby son was diagnosed as dairy intolerant 25 years ago.
