Autumn is quietly making its presence felt, and our menu reflects the season’s changes at Matbaren. Among the dishes, you’ll find our steamed cod with butter-stewed chanterelles, scallions, and trout roe—a classic favorite of ours, now reimagined with a touch of autumn.
’Matbaren’ edition is an ideal wine to it with its complex yet approachable companion to food, especially Nordic cuisine. It’s a wine that leaves you craving a second glass.
We are also serving cloudberries with punch sabayon, vanilla ice cream, almonds, and spruce shoots - the perfect end to your meal. The Lapland cloudberries are gently mashed with sugar and served with a sabayon, where we’ve added a twist by using Flagg Punch, enhancing the flavors of both the cloudberries and the vanilla ice cream. To finish, we drizzle the dish with an oil made from spruce shoots sourced from Värmland.
