Skåne moves in at the Veranda

Mårtengås is a Scanian holiday celebrated on November 10th each year. In conjunction with this, the Veranda restaurant serves a traditional three-course dinner, starting with black soup with giblets, made according to our own traditional recipe long used at the hotel. This is followed by a main course of roast goose with red cabbage from Skåne and a dessert of apple charlotte with vanilla sauce.

This classic menu was created by the restaurateur at the Piperska Muren in Stockholm during the 1850s. However, the original menu featured lutefisk as a starter before the goose, followed by a dessert of rice pudding. Over time, when the menu eventually reached Skåne, black soup and apple charlotte made an entrance, which is how we enjoy the menu today.

“Mårtengås is a delightful Swedish tradition that falls on November 10th each year. At the Veranda, we enjoy celebrating these traditions and passing them on. And we know that many people enjoy eating this particular menu once a year as tradition goes,” explains Karl Persson, restaurant manager at the Veranda.
