The Craftsmanship Menu
The Distiller
Eminente rum, champagne and brioche distillate, saffron vermouth
A cocktail often begins with the distillate—produced using techniques such as heating, freezing, or vacuum distillation. In The Distiller, carefully measured components, each individually distilled, come together: the softness and elegance of Eminente rum, crafted in the traditional Cuban and Spanish style, is paired with a champagne and brioche distillate developed at Stockholm Bränneri’s distillery on Folkungagatan in Stockholm. The drink is completed with a rich and fruity vermouth infused with saffron, which has—yes, you guessed it—been distilled.
The Woodshop
Maker’s Mark 46, French oak, freeze-distilled apples, spruce tips
Woodcraft has a long and significant history in Swedish industry, evident in the craftsmanship of Cadierbaren itself. The Woodshop invites you into a wood workshop, enveloping you with the scents of freshly sawn timber or an endlessly flowing Swedish forest. The flavor profile is dominated by oak, with bourbon aged on French oak barrels, paired with apples and spruce tips to create a cocktail that is elegantly balanced and woody. Served on a wooden pedestal inspired by the beautiful pillars of Cadierbaren, designed by Stockholm-based Anni Cernea.
The Stonemacer
Hazelnut gin, citrus vermouth, cherries
In a lush garden outside Ösmo, among hazelnut trees, meadowsweet, and sour cherries, you’ll find Sam Westerholm. A stonemason for as long as he can remember, his sculptures now adorn streets and squares across Sweden. Alongside him is Sara Ekholm, one of Westerholm’s apprentices, chiseling away with a hammer and tools. Together, they craft the stone-carved glass for The Stonemacer—a cocktail inspired by the garden’s flavors. Smooth hazelnut-infused gin meets fruity and fresh citrus vermouth, balanced with tart cherries for a unique drinking experience.
The Gardener
Belvedere vodka, herbal liqueur, coriander, mint, lemon verbena, white currants
This bright green cocktail evokes a lush herb garden in late summer. The herbs grow wild in flowing greenery, filling the air with their fresh aromas. In The Gardener, mint and coriander from Grand Hôtel Stockholm’s herb garden are paired with an herbal liqueur from Boge Bränneri on Gotland. The flavors are balanced with tart white currants and served lightly carbonated over a large ice cube with a frozen sprig of coriander—designed by Sebastian Törnell and Isbudet in Gothenburg.
The Potter’s Wheel
Tequila Ocho, clay, tomatillo, green tomatoes, jalapeño, lime juice
Like a hand-thrown clay pot, the ingredients of Potter’s Wheel are shaped through fire, kiln, and grill. This treatment enhances the flavors of baked green tomatoes and charred jalapeños, which blend with tangy tomatillo and lime. This homage to pottery ends with tequila infused with edible clay, adding a surprising and delightful mineral finish. Served in a handcrafted glass by Elise Arwin from Hesselby Krukmakeri in Stockholm, inspired by the traditional cantarito, a highball glass for tequila cocktails.
The Bartender
The Sour – Hennessy VS, apple and chestnut spirit, chioggia beet, apple
The Bitter – Hennessy VS, apple, cinnamon, gentian root
The Stiff – Hennessy VS, apple and chestnut spirit, apple, cinnamon
Step between the wooden columns and carved arches of the historic Cadierbaren. Listen to the lively buzz of other guests’ conversations or the music filling the room, surrounded by leather-clad armchairs. Whether you’re a local or a hotel guest from afar, The Bartender invites you to create your own perfectly balanced flavor combination and step into the role of a bartender. Three smaller cocktails are served in individual vessels on a walnut tray designed by Stockholm-based Anni Cernea: The Stiff, The Bitter, and The Sour. A fourth glass is left empty—ready to be filled with your creativity and taste preferences, allowing you to experiment and find the ideal balance of sour, bitter, or strong.
The Glassmaker
Campari, grappa, walnut caramel, minerals, lime acid
The Glassmaker draws inspiration from the first handcrafted glass creations, made from sand, lime, and sodium carbonate. Salty and mineral notes meet the fruity bitterness of Campari and the dark chocolate tones of grappa. Combined with walnut caramel, this cocktail offers a drink that is both approachable and complex. Served in a glass inspired by Italian stained-glass church windows, crafted by glassblower Jennie Olofsson from Big Pink Glass Studio on Gotland.
The Tea Sommelier
Haku vodka, strawberry wine, Pinot Noir grape skins, Pu Erh tonic
Vernon Mauris and his son Gihan Mauris discovered the art of tea in tropical Sri Lanka. Today, Gihan follows in his father’s footsteps, running Stockholm Tea Centre, a shop founded by Vernon in the 1980s. Offering teas of the highest quality and rooted in the tradition of tea ceremonies, the inspiration for The Tea Sommelier stems from such a ritual. The base is charcoal- and bamboo-filtered Haku vodka paired with wine made from strawberries and Pinot Noir grape skins from Swedish winery Thora. Served in a traditional tea cup from Sri Lanka, the ceremony is completed as the guest pours Pu Erh tonic from a teapot.
The Metal Caster
Fords gin, sea buckthorn, sweet vermouth, chili, rosemary, milk clarification
Fire, heat, and molten metal—the art of casting dates back thousands of years. Through intense heat and carefully shaped molds, the caster creates objects with exact precision. The Metal Caster is based on a smooth and rounded Milk Punch, complemented upon serving by a spicy and sweet vermouth, which flows over a sculpted ice block like molten metal. Served in a handblown glass by Annika Weile from Åre Glashytta.
The Ice Maker
Naked Malt, cucumber, eucalyptus, lemon, Greek yogurt, champagne
Crisp and sparkling, The Ice Maker celebrates one of the most essential components of any cocktail: ice. Clear ice is not only visually striking but melts slower, keeping your cocktail chilled without diluting it. This cocktail evokes the purity of an ice cube, with refreshing flavors of cucumber, eucalyptus, and citrus. Delicate champagne tops this Milk Punch made with tangy Greek yogurt, served over a signature ice block crafted by Sebastian Törnell from Isbudet in Gothenburg.
The Illustrator
Veritas rum, cognac, Pineau des Charentes, pear, absinthe
Grand Hôtel Stockholm has long been adorned by artist Jan Vanas' stunning paintings, which bring the hotel's unique character to life. For The Illustrator, Vana has been invited to interpret the cocktail's flavors and associations in a painting—just one of the many artworks that grace this year's cocktail menu at Cadierbaren. The flavors draw inspiration from Régis Cadier's France, blending Veritas rum, cognac, and pear. And as a nod to art history, a splash of absinthe—a favorite of many artists—completes this drink.
The Brew Master
Woodford Reserve Double Oak, roasted oats, wort
In central Stockholm, just two kilometers from Grand Hôtel and Cadierbaren, Hedda Spendrup and Omaka brew beer with a unique mix of innovation and creativity. In one of the early stages of brewing, wort—a sweet, unfermented liquid—is extracted. Omaka's wort, with its natural sweetness and richness, adds an unexpected depth and complexity to The Brew Master. Combined with bourbon, it creates a balanced and sophisticated flavor profile.
The Pastry Chef
Lyres Amaretti, pistachio, saffron, coconut cream, rosewater, milk clarification
This alcohol-free cocktail draws inspiration from the delicate flavors of Middle Eastern and Mediterranean desserts. Saffron, pistachio, and rosewater blend into a rich and aromatic profile, while the creamy, nutty texture evokes the sensation of a fluffy pastry. The Pastry Chef is the perfect way to conclude a celebratory meal—a dessert in drink form that adds the finishing touch to any feast.
The Florist
Paragon Labdanum, rose, viola tricolor, lavender, blue butterfly pea flower, sparkling tea
This alcohol-free cocktail pays tribute to Grand Hôtel Stockholm’s florists, who transform every room and corner of the hotel with blooms, leaves, and color. Enchanting scents and flavors of rose, violet, and lavender harmonize in this elegant drink, completed with non-alcoholic sparkling tea—a celebration of both nature’s beauty and the artistic eye of the florist.
The Jeweller
Lyres White Cane, green coffee, mango, lime zest
This sparkling, alcohol-free cocktail takes its cues from the rum-based classic Ti’ Punch, a refreshing drink popular in the French-speaking Caribbean. Inspired by warm, tropical breezes, The Jeweller features flavors of green coffee, sweet mango, and zesty lime, evoking golden beaches and ruby-red sunsets. Served over a crystal-clear ice cube precisely shaped like a diamond, this drink is an elegant homage to the jeweller’s meticulous craftsmanship.
